  • Yield: 12 servings 1x

Description

Butterscotch Lush is a creamy, layered no-bake dessert featuring a crunchy graham cracker crust, a smooth cream cheese layer, luscious butterscotch pudding, and a light Cool Whip topping. Perfectly chilled and garnished with butterscotch chips or candy bars, this sweet treat combines textures and flavors for an irresistible indulgence.

Ingredients

Scale

Crust

  • 3 cups graham cracker crumbs
  • 3 tablespoons light brown sugar
  • 10 tablespoons butter, melted

Cheesecake Layer

  • 8 ounces cream cheese, room temperature
  • 3/4 cup powdered sugar
  • 8 ounces Cool Whip, thawed

Butterscotch Pudding Layer

  • 2 boxes (3.4 oz each) instant butterscotch pudding mix
  • 3 cups half and half (or whole milk)

Top Layer and Garnish

  • 8 ounces Cool Whip, thawed
  • Butterscotch morsels (optional)
  • Chopped pecans (optional)
  • Chopped Heath candy bars (optional)
  • Butterscotch sauce drizzle (optional)

Instructions

  1. Prep: Get a 9×13 baking pan and set it aside to prepare for layering.
  2. Prepare Crust: In a medium mixing bowl, combine graham cracker crumbs, light brown sugar, and melted butter. Press this mixture firmly and evenly into the bottom of the 9×13 baking pan to form a crust. Freeze the crust for 20 minutes to set while preparing the next layers.
  3. Make Cheesecake Layer: Using an electric mixer, beat the room temperature cream cheese and powdered sugar together until smooth and creamy. Gently fold in the thawed Cool Whip with a spatula until well combined and smooth.
  4. Prepare Butterscotch Pudding Layer: In a separate bowl, whisk the instant butterscotch pudding mix with half and half for 1-2 minutes until it begins to thicken. Let it rest for about 3 minutes to fully thicken.
  5. Assemble Layers: Remove the crust from the freezer. Spread the cheesecake layer evenly over the crust, ensuring it reaches all edges to form a firm layer. Then spread the prepared butterscotch pudding gently over the cheesecake layer. Finally, spread the remaining Cool Whip on top as the last layer.
  6. Chill: Cover the pan with plastic wrap or a lid and refrigerate for at least 6 hours, preferably overnight, to allow the dessert to set and flavors to meld.
  7. Garnish & Serve: Before serving, garnish the top with optional butterscotch chips, chopped pecans, chopped Heath candy bars, or drizzle with butterscotch sauce. Slice into squares and serve chilled for the best taste and texture.

Notes

  • For best results, use room temperature cream cheese to ensure smooth mixing.
  • Half and half gives a creamier pudding, but whole milk can be substituted.
  • Freezing the crust before layering helps maintain a firm base.
  • Letting the pudding thicken for a few minutes ensures proper texture.
  • Chilling overnight enhances flavor and sets the dessert perfectly.
  • Optional toppings add extra texture and flavor but are not required.
