  • ½ cup shredded cheddar cheese
  • ¼ cup red onion, diced (optional)
  • 1 tbsp fresh parsley or chives, chopped
  • 1 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste

Instructions

  1. Preheat Oven: Heat oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Make Cheese Crust: Evenly spread 2 cups of shredded mozzarella and 1 cup of shredded cheddar cheese on the prepared pan in a large circle about 10–12 inches in diameter, forming the base of your pizza crust.
  3. Bake: Place the cheese crust in the preheated oven and bake for 8–10 minutes until the cheese is melted, bubbly, and lightly golden. Remove the crust carefully from the oven.
  4. Add Toppings: Crack the four eggs evenly spaced across the cheese crust. Sprinkle the cooked and crumbled sausage, diced red onion (if using), and the remaining 1 cup mozzarella plus ½ cup cheddar cheese over the top. Season with salt, black pepper, and red pepper flakes to your taste.
  5. Bake Again: Return the pizza to the oven and bake for an additional 10–12 minutes, or until the eggs are set to your preferred doneness and the cheese toppings are melted and slightly browned.
  6. Garnish & Serve: Remove the pizza from the oven and sprinkle chopped fresh parsley or chives over the top. Slice into portions and serve hot for a hearty breakfast treat.
