Ingredients
Scale
Cheese Crust
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Toppings
- 4 large eggs
- ½ lb (225 g) breakfast sausage, cooked and crumbled
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ¼ cup red onion, diced (optional)
- 1 tbsp fresh parsley or chives, chopped
- 1 tsp red pepper flakes (optional, for heat)
- Salt and black pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a pizza pan or baking sheet with parchment paper to prevent sticking.
- Make Cheese Crust: Evenly spread 2 cups of shredded mozzarella and 1 cup of shredded cheddar cheese on the parchment paper, forming a large circle approximately 10 to 12 inches in diameter.
- Bake Crust: Bake the cheese layer for 8 to 10 minutes until the cheese melts, becomes bubbly, and turns lightly golden. Carefully remove from the oven.
- Add Toppings: Evenly crack the 4 eggs across the cheese crust. Sprinkle the cooked and crumbled breakfast sausage, diced red onion (if using), and the remaining 1 cup mozzarella plus ½ cup cheddar cheese over the top. Season with salt, black pepper, and optional red pepper flakes for a bit of heat.
- Bake Again: Place the pizza back in the oven and bake for another 10 to 12 minutes, or until the eggs are set to your desired doneness and the cheese on top has melted completely.
- Garnish & Serve: Once baked, sprinkle the fresh chopped parsley or chives over the pizza. Slice into portions and serve hot for a delicious breakfast treat.
Notes
- The cheese crust is naturally gluten-free, making this recipe suitable for gluten-free diets.
- For an extra crisp crust, bake the cheese base a little longer until it’s golden brown before adding toppings.
- You can substitute sausage with bacon or a vegetarian alternative if preferred.
- Adjust red pepper flakes according to your heat preference or omit for a milder flavor.
- Make sure the eggs do not overcook by monitoring closely during the second bake.
