Instructions

  1. Prepare the Tortellini: Cook the cheese tortellini according to the package instructions until al dente. Drain well and set aside to keep warm.
  2. Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef sirloin and cook for about 5 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add the sliced green bell pepper, sliced onion, and minced garlic. Sauté over medium heat for 5 to 7 minutes until the vegetables are softened and fragrant. Remove from heat and set aside with the beef.
  4. Make the Provolone Sauce: In a separate saucepan, melt the butter over medium heat. Whisk in the all-purpose flour and cook for about 1 minute to make a roux, stirring constantly. Gradually pour in the whole milk while whisking continuously to avoid lumps. Continue to cook and stir until the sauce thickens and begins to bubble, approximately 3 to 4 minutes. Stir in the shredded provolone cheese and grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  5. Combine and Serve: Add the cooked tortellini, browned beef, and sautéed vegetables into the creamy provolone sauce. Gently stir to evenly coat all ingredients.
