Cherry Cheesecake Brownie Bars Recipe

  • Author: Gabriel
  • Total Time: 45 minutes
  • Yield: 16 bars 1x

Description

These Cherry Cheesecake Brownie Bars combine a rich, fudgy chocolate brownie base with a creamy cheesecake layer and bursts of sweet cherry pie filling for a decadent dessert that’s perfect for any occasion.

Ingredients

Scale

Brownie Layer

  • 1 cup butter (melted)
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 0.5 tsp salt

Cheesecake Layer

  • 16 oz cream cheese (softened)
  • 0.5 cup sugar
  • 1 egg
  • 1 tsp vanilla extract

Topping

  • 1 cup cherry pie filling

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan to ensure the bars do not stick.
  2. Make brownie batter: In a large bowl, combine melted butter and sugar. Stir in the eggs and vanilla extract until the mixture is smooth and well blended.
  3. Add dry ingredients: Gradually mix in the all-purpose flour, cocoa powder, and salt until the brownie batter is uniform and smooth. Spread the batter evenly in the prepared baking pan.
  4. Prepare cheesecake layer: In a separate bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the egg and vanilla extract, mixing thoroughly to create the cheesecake layer.
  5. Assemble layers: Pour the cheesecake mixture evenly over the brownie batter in the pan. Drop spoonfuls of cherry pie filling on top of the cheesecake layer, distributing them evenly for bursts of cherry flavor.
  6. Bake and cool: Bake the assembled bars for 30 minutes or until the edges are set but the center is slightly jiggly. Remove from the oven and allow to cool completely before cutting into bars to serve.

Notes

  • Ensure the cream cheese is softened to avoid lumps in the cheesecake layer.
  • Do not overbake to maintain a fudgy texture in the brownies.
  • Cherry pie filling can be substituted with fresh or frozen cherries for a less processed topping.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
