  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1 large egg + 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking soda, cornstarch, and salt until well combined. Set this mixture aside for later use.
  2. Combine Wet Ingredients: In a medium bowl, whisk the melted butter with both the brown and granulated sugars until smooth and lump-free. Then whisk in the egg and egg yolk until just combined, followed by the vanilla extract. The mixture will be thin and glossy.
  3. Incorporate Dry into Wet: Pour the wet mixture into the dry ingredients and fold gently with a large spoon or spatula until just mixed. The resulting dough will be soft, thick, and shiny. Carefully fold in the chocolate chips; they may not stick easily due to the melted butter, so fold until as incorporated as possible.
