Instructions

  1. Season and Sear Chicken: Season the chicken breasts or thighs with salt and pepper. Heat oil in a skillet over medium-high heat. Add the chicken and sear until golden brown and fully cooked through, reaching an internal temperature of 165°F (74°C). Remove the chicken and set aside, keeping it warm.
  2. Sauté Garlic: Reduce the skillet heat to medium. Melt butter in the same skillet, then add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Make Roux: Stir in the all-purpose flour to the melted butter and garlic mixture to create a roux. Cook for 1-2 minutes while stirring continuously to remove the raw flour taste and achieve a light golden color.
  4. Add Broth and Cream: Gradually whisk in the chicken broth, breaking up any lumps to create a smooth gravy. Let the mixture simmer until it thickens to a gravy consistency, about 3-5 minutes. Stir in the heavy cream if using, then season with salt and pepper to taste.
  5. Cook Potatoes: Place peeled and cubed Yukon Gold potatoes in a pot of salted boiling water. Cook for 12 to 15 minutes until the potatoes are fork-tender. Drain well.
