Ingredients
Scale
Dough Ingredients
- 2 cups all-purpose flour
- 4 tsp yeast
- 1 tsp kosher salt
- 1/2 tsp sugar
- 1 cup warm water
Toppings
- 1 cup shredded cooked chicken (preferably ready-to-eat rotisserie chicken)
- 1/2 cup salsa (jarred works better than homemade)
- 1/2 onion, thinly sliced (preferably with a mandolin)
- 1 bell pepper, gutted and sliced into spears
- 1 tbsp extra virgin olive oil
- 1 tbsp fajita seasoning (preferably homemade)
- 2 cups shredded Mexican blend or mozzarella cheese
- Fresh parsley or cilantro, for garnish
Instructions
- Make the Dough: In a large mixing bowl, whisk together the flour, yeast, kosher salt, and sugar to combine all dry ingredients evenly.
- Knead the Dough: Attach a dough hook to your mixer, set the bowl in place, and turn it on low. Slowly pour in the warm water and allow the dough to knead for about one minute until a smooth dough ball forms. Alternatively, knead by hand on a lightly floured surface until smooth and elastic.
- Proof the Dough: Lightly oil a large bowl and place the dough inside. Cover tightly with plastic wrap and let it rest for one hour until it doubles in size.
- Preheat the Oven: Set your oven to 450ºF (232ºC) to ensure high heat for a crispy crust.
- Prepare the Toppings: In a large mixing bowl, combine the shredded chicken, sliced onions, and bell pepper spears. Drizzle with olive oil, sprinkle the fajita seasoning, and toss thoroughly to coat all ingredients evenly.
- Shape the Dough: Lightly oil your pizza pan. Transfer the proofed dough onto it and stretch or roll it out to cover the surface, working the dough up to the edges to form a crust.
- Add Sauce and Cheese: Evenly spread the salsa over the dough, leaving about a 1/2 to 1 inch margin around the edges for the crust. Sprinkle the shredded cheese evenly over the salsa layer.
- Top with Chicken and Veggies: Evenly distribute the seasoned chicken, onions, and peppers over the cheese layer.
- Bake the Pizza: Place the pizza in the preheated oven and bake for 12 to 15 minutes, or until the crust turns golden brown and the cheese is melted and bubbly.
- Rest and Serve: Remove the pizza from the oven and allow it to rest for about 5 minutes before slicing. Garnish with fresh parsley or cilantro for a bright finishing touch and serve warm.
Notes
- Using jarred salsa works better than homemade salsa for this recipe because it helps maintain the right moisture balance on the pizza.
- If you do not have a stand mixer, knead the dough by hand for about 7-10 minutes until elastic and smooth.
- Feel free to adjust fajita seasoning quantities based on your spice preference or use store-bought mixes.
- Resting the pizza after baking improves slicing and helps the cheese set slightly.
- You can substitute Mexican blend cheese with mozzarella or any melting cheese you prefer.
