Instructions

  1. Make the Dough: In a large bowl, whisk together the almond flour, chocolate protein powder, unsweetened cocoa powder, and kosher salt until evenly combined. Add the almond butter, almond milk, maple syrup, and pure vanilla extract. Using a rubber spatula, mix all the ingredients thoroughly until a consistent dough forms.
  2. Form the Bites: Scoop heaping tablespoons (approximately 20 grams each) of the dough and roll them into smooth balls, making a total of 12 bites. Place them on a baking sheet lined with parchment paper. If the dough feels too sticky to handle, freeze the mixture for about 15 minutes before rolling.
  3. Melt the Chocolate: In a medium heatproof bowl, combine the dark chocolate and refined coconut oil. Microwave in 30-second intervals, stirring well after each, until the mixture is melted and smooth—this usually takes about 90 seconds in total.
  4. Coat the Bites: Dip each brownie bite into the melted chocolate, using a spoon to ensure even coating. Lift the bite out with a fork, allowing excess chocolate to drip off, then return it to the lined baking sheet. After coating, sprinkle the top of each bite with mini rainbow-colored chocolate chips while the chocolate is still wet.
