Ingredients
Scale
Chicken & Vegetables
- 1 lb chicken breast, cut into bite-sized pieces
- 8 oz mushrooms, sliced
- 1 medium onion, diced
Liquids & Dairy
- 2 cups chicken broth
- 1 cup sour cream
Dry Ingredients & Seasonings
- 3 tbsp flour
- 1 tsp garlic powder
- Salt, to taste
- Pepper, to taste
Oils & Garnish
- 2 tbsp olive oil
- Fresh parsley, optional for garnish
Instructions
- Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season the bite-sized chicken breast pieces with salt and pepper, then add to the skillet. Sauté the chicken for 5-7 minutes until it turns golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the diced onion and sliced mushrooms. Cook over medium heat for 5-6 minutes, stirring occasionally, until the mushrooms are browned and the onions become translucent.
- Add Flour: Sprinkle 3 tablespoons of flour over the mushroom and onion mixture. Stir well to combine, and cook for 1-2 minutes to eliminate the raw flour taste and begin thickening the sauce.
- Incorporate Broth: Gradually pour in 2 cups of chicken broth while continuously stirring. Continue to cook and stir for 3-4 minutes until the sauce starts to thicken slightly and becomes smooth.
- Add Sour Cream and Seasoning: Reduce the heat to low. Stir in 1 cup of sour cream and 1 teaspoon of garlic powder until fully combined. Mix thoroughly to create a creamy, flavorful sauce.
- Return Chicken to Skillet: Add the cooked chicken pieces back into the skillet. Stir well to coat the chicken with the sauce. Heat through for an additional 2-3 minutes to meld the flavors.
- Serve: Serve the creamy chicken stroganoff over mashed potatoes or egg noodles. Garnish with fresh parsley if desired for an added touch of color and flavor.
Notes
- Use full-fat sour cream for the creamiest texture; low-fat varieties may cause the sauce to curdle.
- Ensure the chicken is cooked through before removing from the skillet to avoid undercooked meat.
- If the sauce becomes too thick, add a little extra chicken broth to reach your preferred consistency.
- This dish pairs wonderfully with egg noodles, mashed potatoes, or even rice.
- You can substitute cremini or baby bella mushrooms for a richer flavor.
- Fresh parsley adds freshness but is optional.
