Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with a cooling rack or parchment paper to prepare for baking the taquitos.
- Prepare Chicken Mixture: In a large bowl, combine the shredded cooked chicken with chili powder, garlic powder, onion powder, cumin, and salt. Stir thoroughly until the spices are evenly distributed throughout the chicken.
- Heat Tortillas: Warm a non-stick skillet over medium heat. Heat each corn tortilla for 30 to 45 seconds on each side until soft and pliable. Transfer the heated tortillas to a zip-close bag to steam and further soften, which makes rolling easier.
- Assemble Taquitos: Place about 2 tablespoons of the seasoned chicken mixture in a line near one edge of each tortilla. Roll the tortilla tightly around the chicken and place the rolled taquito seam side down on the prepared baking sheet, spacing them evenly.
- Apply Cooking Spray: Lightly spritz all sides of the rolled taquitos with cooking spray to promote even browning and crispiness during baking.
- Bake Taquitos: Bake in the preheated oven for 18 minutes. Carefully flip each taquito over and continue baking for an additional 5 minutes, or until the taquitos are browned and crispy.
