  • Total Time: 6 hours 45 minutes
  • Yield: 6 servings 1x

Description

This Crock Pot Cheesesteak Tortellini recipe combines the rich flavors of a classic Philly cheesesteak with creamy cheese tortellini, all slow cooked to tender perfection. Featuring beef, bell peppers, onions, mushrooms, and a velvety cheese sauce, it’s a comforting and hearty one-pot meal that’s easy to prepare and perfect for busy days.

Ingredients

Scale

Beef

  • 1 lb sliced ribeye or sirloin steak (shaved or thinly sliced)

Vegetables

  • 1 bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup mushrooms, sliced

Sauce Base

  • 4 oz cream cheese, softened
  • 1 cup beef broth
  • 1 cup shredded cheese (cheddar or mozzarella blend)

Pasta

  • 12 oz fresh or frozen cheese tortellini

Optional Toppings

  • 46 slices provolone or mozzarella cheese
  • Parmesan cheese for garnish

Seasonings (optional)

  • 1 tsp garlic powder or 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Prep the beef: For enhanced flavor, heat a skillet over medium-high heat and brown the sliced ribeye or sirloin beef until just seared, about 2-3 minutes per side, then transfer to the Crock Pot.
  2. Layer ingredients: In the Crock Pot, add the browned beef along with the sliced bell peppers, onions, mushrooms, beef broth, and seasonings like garlic, Italian seasoning, Worcestershire sauce, salt, and pepper. Mix gently to combine.
  3. Slow cook: Cover the Crock Pot and cook on low for 6–7 hours or on high for 3–4 hours, until the beef is tender and vegetables are cooked through.
  4. Make it creamy: About 30 minutes before serving, stir in the softened cream cheese and shredded cheese. Mix well until the cheeses are completely melted and the sauce becomes creamy and smooth.
  5. Add tortellini: Stir in the fresh or frozen cheese tortellini, carefully folding it into the sauce. Cover and cook for another 20–30 minutes, avoiding overcooking to keep the pasta tender but firm.
  6. Finish with cheese: In the last 5 minutes, layer provolone or mozzarella slices over the top, allowing them to melt into a gooey, melty finish.
  7. Serve: Garnish with grated Parmesan if desired and serve hot with warm garlic bread and a fresh side salad.

Notes

  • Use shaved ribeye or sirloin for authentic cheesesteak flavor.
  • Add tortellini near the end to avoid overcooking and mushy pasta.
  • Enhance flavor with garlic, Worcestershire sauce, and Italian seasoning.
  • Double the cheese for a richer, gooier dish.
  • Serve with warm garlic bread and a side salad for a complete meal.
