Firecracker Sauce

  • 1/2 cup buffalo sauce
  • 2 tbsp coconut aminos
  • 3 tbsp coconut sugar
  • 2 tsp rice vinegar
  • 1 tsp ginger powder
  • 2 tsp garlic powder
  • Salt and black pepper to taste (omit pepper for AIP)

Main Ingredients

  • 2 tbsp avocado oil
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • 1 lb ground chicken
  • 2 tbsp green onion (sliced)
  • 3 cups cauliflower rice (cooked) or steamed rice

Instructions

  1. Prepare Firecracker Sauce: In a bowl, combine buffalo sauce, coconut aminos, coconut sugar, rice vinegar, ginger powder, garlic powder, and salt and black pepper to taste. Stir thoroughly to blend all the flavors well and adjust seasoning as desired.
  2. Sauté Broccoli: Heat avocado oil in a large pan over medium heat until shimmering. Add broccoli florets and sauté for 5-7 minutes until they are lightly crisp yet tender. Season with salt and pepper to taste, then remove from the pan and set aside.
  3. Cook Ground Chicken: In the same pan, add ground chicken and season lightly with salt and pepper. Crumble the meat with a spatula and cook thoroughly over medium heat until fully cooked and no longer pink, about 6-8 minutes.
  4. Combine Ingredients: Return the cooked broccoli to the pan with the ground chicken. Pour in the prepared firecracker sauce and stir well, ensuring the sauce coats both the chicken and broccoli evenly and is heated through.
  5. Serve: Divide the cauliflower rice or steamed rice into bowls. Top with the firecracker chicken and broccoli mixture, and garnish with sliced green onions for added freshness and flavor.

Notes

  • For an AIP (Autoimmune Protocol) version, omit black pepper.
