  • Total Time: 1 hour
  • Yield: 4 servings 1x

Description

This Garlic Parmesan Chicken and Potatoes recipe combines juicy, well-seasoned chicken breasts with crispy roasted baby potatoes, all topped with a rich garlic butter sauce and freshly grated Parmesan cheese for an irresistible, comforting one-dish meal.

Ingredients

Scale

For the Chicken

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into large chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

For the Potatoes

  • 1 ½ lbs baby potatoes (halved) or Yukon Gold potatoes (chopped)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried parsley

For the Garlic Parmesan Finish

  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ¾ cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Season the chicken: In a large bowl, toss the chicken pieces with olive oil, salt, black pepper, paprika, Italian seasoning, and garlic powder until evenly coated. Set aside to marinate briefly.
  3. Season the potatoes: In a separate bowl, combine the baby potatoes with olive oil, salt, black pepper, paprika, and dried parsley, tossing well to coat each piece.
  4. Assemble the dish: Spread the seasoned potatoes evenly across the prepared baking dish. Nestle the seasoned chicken pieces among the potatoes to ensure even cooking.
  5. Bake first round: Place the dish in the preheated oven and bake uncovered for 30 minutes, stirring the potatoes once halfway through to promote even roasting.
  6. Prepare garlic butter: While the chicken and potatoes are baking, mix the melted butter with the minced garlic in a small bowl, allowing the garlic flavors to infuse the butter.
  7. Add Parmesan and finish baking: Remove the dish from the oven. Drizzle the garlic butter evenly over the chicken and potatoes, then generously sprinkle the freshly grated Parmesan cheese over the top. Return the dish to the oven and bake for an additional 10 to 15 minutes, until the chicken reaches an internal temperature of 165°F and the potatoes are fork-tender.
  8. Garnish and serve: Once baked thoroughly, optionally sprinkle with chopped fresh parsley for a pop of color and fresh flavor. Serve the dish hot for a satisfying meal.

Notes

  • Use chicken breasts or thighs depending on your preference; thighs will be juicier, breasts leaner.
  • Feel free to substitute baby potatoes with Yukon Gold or red potatoes.
  • Make sure to not overcrowd the pan to allow for proper roasting and crisping.
  • To check doneness, use a meat thermometer to ensure the chicken reaches 165°F internally.
  • The garlic butter can be made ahead and stored in the fridge for convenience.
  • For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
