- Prepare pan: Spray a 9 x 13-inch baking pan with non-stick spray to prevent sticking, then set it aside for later use.
- Measure cereal: Pour 6 cups of Golden Grahams cereal into a large mixing bowl and set aside to combine with the melted mixture later.
- Melt ingredients: In a large saucepan over low heat, melt 4 tablespoons of butter. Once melted, add 1 1/2 cups chocolate chips, 5 cups mini-marshmallows, 1/4 cup light Karo syrup, and 1 teaspoon vanilla extract. Stir continuously.
- Combine and melt: Keep stirring the mixture on low heat until the chocolate chips and marshmallows are completely melted and smooth, ensuring an even blend of flavors and a gooey texture.
- Coat cereal and mix marshmallows: Immediately pour the melted mixture over the Golden Grahams cereal, stirring until the cereal is evenly coated. Then stir in the additional 2 cups of mini-marshmallows, mixing gently.
- Press and set: Transfer the mixture into the prepared pan and press it down evenly for good compactness. Sprinkle extra mini-marshmallows on top if desired for added texture and appearance.
- Cool and serve: Allow the bars to cool at room temperature until set, about 30 minutes to 1 hour, then cut into squares and serve.
