  • 800g uncooked potatoes, cubed
  • 1 tsp salt
  • 1 tsp garlic powder

Creamy Garlic Parmesan Sauce

  • 120ml milk (any type)
  • 100g light cream cheese (Philadelphia Lightest)
  • 40g grated Parmesan
  • Salt, garlic, mixed herbs (to taste)
  • 50g shredded mozzarella (or any low-fat cheese)
  • Fresh parsley for garnish

Instructions

  1. Cook the potatoes: Air fry the cubed potatoes at 200°C (400°F) for 18-20 minutes, or bake in the oven at the same temperature for 20-23 minutes, until golden and crispy. Use olive oil or cooking spray to ensure crispiness and prevent drying out.
  2. Cook the chicken: Heat olive oil in a skillet over medium heat. Sauté the seasoned cubed chicken breast for 5-6 minutes until cooked through and lightly browned.
  3. Make it creamy: Lower the heat to prevent curdling. Add milk and light cream cheese to the cooked chicken, stirring continuously until the mixture becomes smooth and creamy. Season with salt, garlic, and mixed herbs as desired.
  4. Combine potatoes and cheese: Mix the crispy potatoes into the creamy chicken sauce, then sprinkle shredded mozzarella evenly on top. Cover the pan and let it cook for 4-5 minutes until the mozzarella melts thoroughly.
