Ingredients
Scale
Filling
- 8 oz Feta Cheese (Can substitute with goat cheese or ricotta)
- 2 tbsp Dill (Use fresh for best flavor)
- 2 tbsp Mint (Basil can be a substitute)
- 1 tbsp Lemon Zest (Use zest from unwaxed lemons)
- Freshly ground black pepper, to taste
Phyllo Rolls
- 8 sheets Phyllo Pastry (Keep covered with a damp cloth to prevent drying out)
- 4 tbsp Olive Oil (Brush between layers and on tops)
Chili Honey Drizzle
- 1/2 cup Honey (Use high-quality honey)
- 1 tbsp Chili Flakes (Adjust according to desired spice level)
- 1 tsp Lemon Juice (Freshly squeezed)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
- Prepare Feta Mixture: In a mixing bowl, crumble the feta cheese and combine it thoroughly with fresh dill, mint, lemon zest, and freshly ground black pepper until well incorporated.
- Prepare Phyllo Strips: Lay two sheets of phyllo pastry flat on a clean surface. Brush each sheet generously with olive oil then stack and cut into strips suitable for rolling.
- Assemble Rolls: Place a tablespoon of the feta herb mixture at the end of each phyllo strip. Fold the edges of the pastry over the filling and roll tightly to secure the filling inside.
- Bake Rolls: Arrange the rolls seam side down on the prepared baking sheet. Brush the tops with olive oil to aid browning and bake for 18-20 minutes or until the rolls are golden brown and crisp.
- Prepare Chili Honey: While the rolls bake, combine honey, chili flakes, and lemon juice in a small saucepan. Warm gently over low heat, stirring occasionally until the mixture is well blended and infused with chili flavor.
- Serve: Remove the baked rolls from the oven and allow to cool slightly. Drizzle generously with the warm chili honey before serving for a perfect balance of sweet, spicy, and savory flavors.
Notes
- Keep phyllo pastry covered with a damp cloth while working to prevent it from drying out.
- Adjust chili flakes in the honey drizzle according to your preferred spice tolerance.
- Substitutes for feta such as goat cheese or ricotta work well but will change the texture slightly.
- If lemon juice is unavailable for the chili honey, a splash of vinegar can add brightness.
- Serve warm for the best texture contrast between crispy phyllo and creamy filling.
