Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Blondie Batter

  • 1 cup butter, softened
  • 1/4 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract

Apple Filling

  • 2 large apples, chopped finely
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Maple Glaze

  • 2 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and line an 11×7-inch pan with tin foil or spray it with cooking spray for easy removal of the blondies.
  2. Make Apple Filling: In a medium saucepan over medium-low heat, combine chopped apples, 2 tablespoons brown sugar, 1 tablespoon butter, 1/2 teaspoon vanilla extract, and 1/2 teaspoon cinnamon. Cook for 3-4 minutes until the apples are tender and the mixture is fragrant. Remove from heat and let it cool.
  3. Prepare Blondie Batter: In a large bowl, cream 1 cup softened butter until light and fluffy, about 1 minute. Add in 1 cup dark brown sugar and 1/4 cup granulated sugar; mix until well combined. Beat in eggs one at a time, mixing well after each addition. Stir in salt and 1 1/2 teaspoons vanilla extract until incorporated.
  4. Combine Dry Ingredients: In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon cinnamon. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Assemble Blondies: Spread half of the blondie batter evenly in the prepared pan, using a spatula or your hands (the batter is thick). Evenly spread the cooled apple filling over this layer, then top with the remaining blondie batter, smoothing it out evenly.
  6. Bake: Bake for 25-30 minutes until the top is golden brown and a cake tester inserted in the center comes out clean. Remove from oven and allow to cool for about 10 minutes.
  7. Prepare Maple Glaze: In a small saucepan over low heat, melt 2 tablespoons butter with 1/4 cup pure maple syrup, 1/4 teaspoon vanilla extract, and 1/8 teaspoon ground cinnamon. Remove from heat, sift in 1/2 cup powdered sugar, and whisk until smooth. Let the glaze cool for 8-10 minutes to thicken.
  8. Glaze and Serve: Pour the maple glaze evenly over the warm blondies and let set. Once the glaze is set, slice into squares and enjoy your delicious maple glazed apple blondies!

Notes

  • Use firm apples like Granny Smith or Honeycrisp for the best texture in the apple filling.
  • Ensure the butter is softened for easier creaming with sugars.
  • For a nuttier flavor, consider adding chopped walnuts or pecans to the batter.
  • Store blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Glaze can be made ahead and refrigerated; rewarm slightly before pouring over blondies.
