  • Pinch kosher salt

Cheesecake Filling

  • 3 (8-oz.) blocks cream cheese, softened
  • 3/4 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1 tsp pure vanilla extract
  • 1/2 tsp kosher salt

Sour Cream Topping

  • 1 cup sour cream
  • 2 tbsp granulated sugar
  • 1/2 tsp pure vanilla extract

Peanut Butter Decoration and Garnish

  • 1/4 cup creamy peanut butter
  • 2 tbsp heavy cream
  • 8 mini Nutter Butter cookies (or 4 crushed Nutter Butter cookies)
  • 2 Heath bars (2.8 oz total), chopped into small pieces

Instructions

  1. Preheat oven and prepare pan. Preheat oven to 325ºF and spray an 8” or 9” springform pan generously with cooking spray to prevent sticking.
  2. Make crust crumbs. In a large resealable bag or food processor fitted with a metal blade, crush Nutter Butter cookies until fine crumbs form. Transfer crumbs to a mixing bowl.
  3. Crush toffee bars. Place Heath bars in a separate resealable bag and crush with a rolling pin or skillet until pieces are no larger than pea-sized. Add to bowl with cookie crumbs along with melted butter and a pinch of kosher salt. Stir thoroughly to combine and create the crust mixture.
  4. Prepare cheesecake filling. In a large bowl using a hand mixer or stand mixer with paddle attachment, beat softened cream cheese until smooth and creamy. Add peanut butter and granulated sugar, continuing to beat until fully incorporated and smooth. Add eggs one at a time, beating well after each addition. Mix in sour cream, vanilla extract, and kosher salt until just combined, being careful not to overbeat to maintain a creamy texture.
  5. Form crust and add filling. Press the Nutter Butter and toffee crumb mixture firmly into the bottom and about one-third up the sides of the prepared springform pan, packing it tightly and evenly. Pour the prepared cheesecake filling over the crust, smoothing the top. Wrap the base of the pan with aluminum foil to prevent water leakage.
  6. Bake cheesecake in water bath. Place the springform pan into a large roasting pan. Pour enough boiling water into the roasting pan to come halfway up the sides of the springform pan. Bake in the preheated oven for 1 hour and 30 minutes, until the center of the cheesecake slightly jiggles when gently shaken.
  7. Prepare sour cream topping. While the cheesecake bakes, combine 1 cup sour cream, 2 tablespoons granulated sugar, and 1/2 teaspoon pure vanilla extract in a bowl, mixing until smooth.
  8. Add sour cream topping and continue baking. Remove cheesecake from oven carefully, spread the sour cream topping evenly over the baked cheesecake surface. Return cheesecake to the oven and bake for an additional 10 minutes.
  9. Cool cheesecake gradually. Turn off the oven, prop open the oven door to allow gentle cooling, and let the cheesecake cool inside the oven for 1 hour. Then transfer to the refrigerator and chill for at least 5 hours or overnight to set completely.
  10. Prepare peanut butter decoration. In a bowl, beat peanut butter and heavy cream together with a hand mixer until smooth and creamy. Transfer this mixture into a pastry bag, snip the tip, and pipe lines across the top of the cheesecake in one direction. Rotate the cheesecake slightly and pipe lines in the opposite direction to form a diamond pattern.
  11. Garnish cheesecake. Decorate the top with mini Nutter Butter cookies or crushed Nutter Butter cookies and sprinkle with chopped Heath bar pieces for an extra crunchy texture and toffee flavor.
