  • Yield: 12 servings 1x

Description

Pumpkin Delight Lush Dessert is a creamy, layered no-bake treat featuring a graham cracker crust, rich cream cheese layer, and a spiced pumpkin pudding topping finished with whipped topping and crunchy pecans. This easy-to-make dessert is perfect for fall gatherings and holiday celebrations.

Ingredients

Scale

Crust

  • 2 cups graham cracker crumbs
  • 1 tbsp granulated sugar
  • ½ cup unsalted butter, melted

Cheesecake Layer

  • 16 oz cream cheese, softened
  • 1½ cups powdered sugar
  • 16 oz whipped topping, thawed (divided into 1½ cups and 2 cups)

Pumpkin Layer

  • 3.4 oz box instant vanilla pudding mix
  • 12 oz can evaporated milk
  • 15 oz can pure pumpkin
  • 1½ tsp pumpkin spice

Topping

  • ¼ cup pecans, chopped

Instructions

  1. Prepare the crust: In a small bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly until crumbs are evenly coated, then press the mixture into the bottom of a 9×13 inch baking dish, flattening it to form an even crust layer.
  2. Make cheesecake layer: Beat softened cream cheese and powdered sugar on high speed until completely combined and smooth. Gradually add 1½ cups of the thawed whipped topping and beat on medium speed until well incorporated to create a fluffy cheesecake mixture.
  3. Assemble cheesecake layer: Spread the cheesecake mixture evenly over the prepared graham cracker crust. Place in the refrigerator to chill while you prepare the pumpkin layer.
  4. Prepare pumpkin layer: In a mixing bowl, beat instant vanilla pudding mix with evaporated milk until smooth and thickened. Add pure pumpkin and pumpkin spice, beating until fully combined.
  5. Finish pumpkin layer: Gently fold ½ cup of the whipped topping into the pumpkin mixture to lighten it, then spread this pumpkin mixture evenly over the cheesecake layer in the baking dish.
  6. Add topping and garnish: Spread the remaining 2 cups of whipped topping on top of the pumpkin layer to cover it completely. Sprinkle chopped pecans evenly over the whipped topping as garnish.
  7. Chill and serve: Refrigerate the assembled dessert for at least 2 hours to set the layers before serving chilled.

Notes

  • This dessert is best served chilled and should be stored in the refrigerator until ready to eat.
  • For extra flavor, you can toast the pecans lightly before adding them on top.
  • Make sure the cream cheese is softened to avoid lumps in the cheesecake layer.
  • Use thawed whipped topping for the best texture; avoid using it straight from the freezer.
  • Can be made a day in advance to enhance flavor melding.
