- Prepare the crust: In a small bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly until crumbs are evenly coated, then press the mixture into the bottom of a 9×13 inch baking dish, flattening it to form an even crust layer.
- Make cheesecake layer: Beat softened cream cheese and powdered sugar on high speed until completely combined and smooth. Gradually add 1½ cups of the thawed whipped topping and beat on medium speed until well incorporated to create a fluffy cheesecake mixture.
- Assemble cheesecake layer: Spread the cheesecake mixture evenly over the prepared graham cracker crust. Place in the refrigerator to chill while you prepare the pumpkin layer.
- Prepare pumpkin layer: In a mixing bowl, beat instant vanilla pudding mix with evaporated milk until smooth and thickened. Add pure pumpkin and pumpkin spice, beating until fully combined.
- Finish pumpkin layer: Gently fold ½ cup of the whipped topping into the pumpkin mixture to lighten it, then spread this pumpkin mixture evenly over the cheesecake layer in the baking dish.
- Add topping and garnish: Spread the remaining 2 cups of whipped topping on top of the pumpkin layer to cover it completely. Sprinkle chopped pecans evenly over the whipped topping as garnish.
