Queso Chicken Enchiladas Bake Recipe

  • Author: Gabriel
  • Total Time: 40 minutes
  • Yield: 5 servings 1x

Description

Queso Chicken Enchiladas Bake is a flavorful Mexican-inspired casserole featuring tender shredded chicken mixed with taco seasoning, sour cream, cheddar cheese, and green chilies, all wrapped in soft flour tortillas. These are then baked under a creamy, cheesy queso blanco sauce made with Velveeta and diced tomatoes with green chilies until bubbly and hot. This comforting bake makes for a perfect easy dinner that’s rich, cheesy, and satisfying.

Ingredients

Scale

Main Ingredients

  • 5 burrito size flour tortillas
  • 2.5 cups shredded chicken (rotisserie or canned)
  • 0.5 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green chilies
  • 10 ounces diced tomatoes with green chilies, undrained
  • 1 pound queso blanco Velveeta, cubed

Instructions

  1. Mix the chicken filling: In a large mixing bowl, combine the shredded chicken, taco seasoning, sour cream, shredded cheddar cheese, and chopped green chilies. Stir well until all ingredients are evenly mixed, then set the mixture aside.
  2. Prepare the queso sauce: In a medium saucepan over medium-high heat, add the cubed Velveeta and the undrained diced tomatoes with green chilies. Stir the mixture occasionally until the cheese has completely melted and the sauce is smooth and creamy.
  3. Assemble the enchiladas: Lay the flour tortillas flat on a clean surface. Spoon about 1/2 to 3/4 cup of the chicken mixture into the center of each tortilla, spreading it evenly, then roll up each tortilla tightly like a burrito.
  4. Arrange and top: Place the rolled tortillas seam-side down side by side in a 9×13 inch casserole dish. Pour the warm queso sauce evenly over the top of the arranged enchiladas, ensuring they are well covered.
  5. Bake to finish: Preheat your oven to 350°F (175°C). Bake the casserole for 20 to 25 minutes until it is heated through and bubbly on top. Serve hot and enjoy the cheesy, flavorful enchiladas.

Notes

  • Use rotisserie or canned chicken to save preparation time.
  • If using corn tortillas instead of flour, warm them in the microwave for 20-30 seconds to make them more pliable and avoid cracking while rolling.
  • Ensure you check for allergies in all packaged ingredients before preparing the dish.
  • This dish is best served fresh out of the oven for maximum cheesiness and warmth.
