These S’mores cookie bars combine a buttery graham cracker cookie base with layers of melty Hershey’s chocolate and gooey marshmallow fluff, baked to golden perfection.   • 1/3 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1/2 cup Graham crackers (finely crushed, about 3.5 sheets)
  • 1/4 tsp Salt
  • 3/4 tsp Baking soda

Filling and Topping

  • 5 Standard Hershey bars
  • 1 1/2 cups Marshmallow fluff

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and set it aside.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fully combined and creamy. Then add the egg and vanilla extract and mix well to incorporate.
  3. Mix Dry Ingredients: Add the all-purpose flour, finely crushed graham crackers, salt, and baking soda to the wet ingredients. Mix just until the flour mixture disappears; do not overmix.
  4. Form Bottom Layer: Press half of the cookie dough evenly into the prepared baking pan. Remove the parchment paper with the dough from the pan and place it in the freezer to chill. Re-line the pan with fresh parchment paper for the next layer.
  5. Chocolate and Marshmallow Layer: Place the Hershey chocolate bars evenly over the dough in the pan, breaking the bars into pieces as needed to cover the surface. Spread the marshmallow fluff evenly over the chocolate layer.
  6. Top with Remaining Dough: Carefully remove the chilled cookie dough layer from the freezer and gently flip it onto the marshmallow fluff, aligning it carefully to keep it intact.
  7. Bake: Bake the layered bars in the preheated oven for 25 minutes, until golden and set.
  8. Cool and Serve: Allow the bars to cool fully in the pan before slicing to ensure clean cuts and reveal the beautiful layers.

  • Freezing the bottom dough layer helps make flipping it easier and prevents tearing.
  • You can substitute Hershey bars with other milk chocolate bars if preferred.
