Ingredients

Scale

For the Rice:

  • 2 cups cooked white or brown rice
  • 1 teaspoon taco seasoning (optional)

For the Meat:

  • 1 pound ground beef, chicken, turkey, or plant-based protein
  • 2 tablespoons taco seasoning
  • 1/2 cup water

Toppings:

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup sliced jalapeños (optional)
  • Fresh cilantro for garnish
  • Avocado slices (optional)

Instructions

  1. Cook the Rice: If you do not have pre-cooked rice ready, prepare 2 cups of white or brown rice according to the package directions. Once cooked, you can stir in 1 teaspoon of taco seasoning for added flavor. Set aside.
  2. Prepare the Meat: Heat a large skillet over medium heat and add 1 pound of your chosen ground meat or plant-based protein. Cook for 5 to 7 minutes, breaking it apart frequently until it is evenly browned.
  3. Add Seasoning: Sprinkle 2 tablespoons of taco seasoning over the cooked meat and pour in 1/2 cup of water. Stir well to combine, then let the mixture simmer for around 5 minutes until it thickens slightly and the flavors meld.
  4. Prepare Toppings: While the meat simmers, chop and prepare your toppings: shred 1 cup of lettuce, dice 1 cup of tomatoes, slice 1/4 cup of jalapeños if using, and slice avocado if desired. Have 1 cup of shredded cheese and sour cream or Greek yogurt ready.
  5. Assemble the Bowl: Start by placing the cooked rice at the base of each bowl. Add a generous scoop of the seasoned meat on top. Layer the shredded lettuce, diced tomatoes, and shredded cheese evenly. Finish each bowl with a dollop of sour cream or Greek yogurt, jalapeños, fresh cilantro garnish, and avocado slices if you like.
  6. Serve Immediately: Serve your Taco Rice Bowl warm, optionally adding extra hot sauce or salsa according to taste. Enjoy the combination of textures and fresh flavors!
