Ingredients
Scale
Meat
- 1 lb Italian sausage
Vegetables and Aromatics
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups spinach, chopped
Broth and Dairy
- 6 cups chicken broth
- 1 cup heavy cream
- 1 1/2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
Pantry
- 1 (15 oz) can of white beans, drained and rinsed
- 8 oz lasagna noodles, broken into pieces
- Salt and pepper to taste
Instructions
- Cook the Sausage: In a large pot over medium heat, cook the Italian sausage until browned, breaking it apart with a spoon to crumble it evenly. Once cooked, remove the sausage from the pot and set it aside.
- Sauté Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for about 3 minutes until softened and fragrant.
- Add Broth and Beans: Pour in the chicken broth and add the drained white beans. Bring the mixture to a boil, then reduce heat to simmer.
- Incorporate Cream and Cheeses: Stir in the heavy cream, chopped spinach, ricotta cheese, shredded mozzarella, and grated Parmesan cheese. Let the soup simmer gently for about 5 minutes, stirring occasionally to blend the flavors.
- Cook the Noodles: Add the broken pieces of lasagna noodles to the pot. Cook until the noodles are tender, approximately 10 minutes.
- Combine and Season: Return the cooked sausage to the soup and continue cooking for an additional 5 minutes to allow all flavors to meld together. Season the soup with salt and pepper to taste.
- Serve: Ladle the hot soup into bowls and garnish with extra Parmesan cheese if desired. Enjoy immediately.
Notes
- For a vegetarian version, omit the sausage and use vegetable broth instead of chicken broth.
- Use gluten-free lasagna noodles to make this dish gluten-free.
- If fresh spinach is unavailable, frozen spinach can be used—make sure to thaw and drain excess water before adding.
- To reduce calories, substitute heavy cream with half-and-half or a lighter cream alternative.
- Leftovers can be stored in the refrigerator for up to 3 days; reheat gently on the stove.
